Magnificent Marvelous Main Vegan Dishes

 from Laurel's Kitchen
 Simple, not too Spicy Yet filling
 1 ½ C yellow or orange split peas
 1 t salt
 1 chopped onion
 ½ green pepper (optional)
 1 t turmeric
 ½ t curry powder
 2 T oil
 1 ½ t mustard seeds
 juice of 1 lemon
 1. Boil the split peas for about 30 minutes-- until they are tender, but
	not so long that they lose their shape. They should be rather dry, like
	mashed potatoes. Stir in salt. 
 2. While the peas are cooking, chop onion and green pepper. Combine with
    turmeric and curry powder.
 3. Heat oil in a large, heavy pan or pot with a lid. When the oil is hot,
    add mustard seeds and cover immediately. 
 4. The seeds will pop noisily; when the sound quiets down, immediately add
    onion mixture. Saute until onion is transparent and golden, stirring
    frequently.  
 5. Stir into peas along with the lemon juice. Serve over rice.
 

[2] Sunburgers from the Swissdorf Family

  • Some leftover oatmeal, a couple cups worth.
  • Nutritional yeast
  • Soy Sauce
  • 1 Onion
  • Olive Oil

Mix a tablespoon of oil with the oatmeal, about ¼ cup of nutritional yeast, a couple tablespoons of oil and the onion, minced. Pat into patties, put on a greased pan, and bake at 350 degrees until golden, about 20 minutes. Serve like any other burger.
